Opened in 1902, Yamaki Jozo produces soy sauce and miso in Kamikawa, Saitama Prefecture. Run by fifth generation Kitani-san and his siblings, Yamaki Jozo adheres to traditional methods and takes great care in making their products. They use pristine ingredients including Japan-grown whole soy beans, rice, wheat and water that comes from a natural spring at the top of a local mountain.
This is the koji they grow to make the beautiful ferments that they are most famous for. We feel lucky to be able to provide this to you!
Over 20 years ago they built a pipe from the top of a local mountain to their factory in order to secure their supply of the clear, natural spring water. These ingredients are used to produce the pride of the company - their 'soul' they say - the moromi (mash). This moromi is aged for two years in traditional cedar barrels. Their soy sauce is so highly regarded that it is presented annually to the Emperor of Japan. Check out their soy sauce and sesame seeds as well.
